Mixed Culture Farmhouse Ale | 6.0%
This Woodnote Cellar farmhouse ale was fermented with our house saison strain and Brettanomyces to give it a bright flavor with notes of lemon flesh, dried apricot and white grapes. It was aged in 100% French oak before being blended with our house blonde ale for a total maturation time of 16 months. This beer was fermented to complete dryness, giving it a soft vinous finish.

As Wilderness humans we embrace being kind to others as well as ourselves so we brewed a gluten-reduced, low impact (ABV) ale mashed with locally grown/malted Sinagua Malt and Sonora Wheat. A touch of orange peel, coriander, and light dry hop from Centennial/ Loral hops give this super session beer just enough intrigue on the palate. $5.50

A base of Sinagua 2 row and a touch of Munich malt really showcases Crosby’s estate grown Strata and Comet hops. The hops lend floral aromatic notes to a crisp lager base. PSC La Flor Rosé
Page Springs has been making dry, European-style rosés since we first opened our doors. We are firm believers that pink wines have been wrongfully maligned in our country due to the visual association with the similarly colored sweet wines (the name of which we shall not utter here). So…we are here to restore your faith in these elegant, refreshing wines and can only suggest that you drink them chilled on a warm summer day or enjoy them with oysters, sushi or even a salad.
PSC Mule's Mistake
The “Mule’s” has taken on a life of its own and has grown well beyond the humble origins of a mere mistake. Nowadays, we think of Mule’s as PSC’s Pinot stand in: red fruit driven, light to medium bodied and infinitely drinkable. As Mule’s has evolved, so has our approach to crafting it. Now in its tenth year as an Arizona blend, all of the juiciness and bright red fruits you’ve come to love combine as a light, refreshing summer drinker. Hopefully it’ll have you shouting: "long live the Mule!"

Mezcolada
Everyone THINKS they know a Piña Colada, but few know the true, authentic version. This classic hails from Puerto Rico where it was created by bartender Ramón “Monchito” Marrero at the Caribe Hilton in 1954. He mixed up a fruity blend of rum, coconut cream and pineapple juice and boom -- instant banger. Come 1978, the piña colada was declared the official drink of Puerto Rico. Through Wilderness, this summer classic gets a desert revamp, utilizing agave spirit rather than rum. $12
Frose
Grapefruit Rosemary Frosé is an Arizona Wilderness take on the trendy, summer adult slushie featuring AZ-grown grapefruit and rosemary grown right in our garden. Fruit forward and easy drinking, one might say this cocktail has high “crushability” -- and being lower in ABV, lends itself to doing just that. $8
