Our water conserving Belgian style witbier mashed with Arizona grown/malted Sonora white wheat and Sinagua Malt brewed with the intention of supporting our local grain economy. Sabro hops, a derivative of the native southwestern hop varietal Neo Mexicanus make the ethos of this truly AZ. $6

Using 100% local grain exemplifies the malt nuances of our house light lager. Cool fermentation lends to a dry crushable beer perfect to bring along for any outdoor activity.

IPA - American | 6.8%
Our flagship IPA incepted in our founders garage. This beer has evolved over the years into a perfectly balanced IPA w/ 100% Sinagua Malt base and citrus forward American hops.

Brewed in celebration of Downtown Phoenix’s cultural heritage, bringing the wilderness to Arizona’s urban center. A hazy IPA showcasing Citra and Mosaic hops. $6.50
Bourbon Bunny
Bourbon Barrel-aged Imperial Porter | 10.0%
The BBA version of our imperial porter w/ local ethically sourced cacao nibs (Zak's Chocolates), Madagascar vanilla beans and just enough lactose to round out the flavors for a soft smooth milk chocolate flavor. This version was aged in Blanton’s bourbon barrels for 12 months. Think chocolate ice cream w/ a bourbon glaze drizzled on top. 10oz - $10.25

Imperial Porter | 8.0%
This beer is a collaboration effort with Stillwater Artisinal Ales, out of Baltimore, MD. We brewed a chocolate milk porter that utilizes high quality cacao nibs, Madagascar vanilla beans and just enough lactose to create a well balanced and full bodied beer. 10oz - $6.25
Dirty Hop Water: CASH
Hazy IPA | 6.9%
The latest iteration of our Dirty Hop Water hazy IPA series which focuses on experimental hops, effervescent creamy pineapple juice and white peach express across the palate from Belma, Idaho 7, HBC472, HBC630, Motu, Rakau and Sabro hops. $7
Double La Ciudad
Double IPA | 8.5%
Brewed in celebration of our DTPHX neighborhood, bringing the wilderness to Arizona’s urban center. This hazy DIPA doubles down on the characteristics we love from La Ciudad. Locally grown & malted Sinagua Malt and Sonora wheat compliment juicy citrus aromas from a massive (6.5/bbl) Mosaic and Citra DDH. $7.50
Earth's Green Mantle
Dry Irish Stout | 5.0%
This traditional dry Irish stout pays homage to our belief that we were Celtic warriors in a previous life. Brewed in the Irish tradition for pub drinking sessions and raucous conversations. Slainte! $6
Human Kind(ness)
Low Impact Ale | 2.3%
As Wilderness humans we embrace being kind to others as well as ourselves so we brewed a gluten-reduced, low impact (ABV) ale mashed with locally grown/malted Sinagua Malt and Sonora Wheat. A touch of orange peel, coriander, and light dry hop from Centennial/ Loral hops give this super session beer just enough intrigue on the palate. $5.50

Sour ale fermented on second-use AZ blackberries, refermented on hand-picked fresh AZ blackberries (Folded Hills Orchard), and matured for 18 months. 500ml - $18.25
Nocturnal Opulence
Bourbon Barrel-Aged Imperial Stout | 9.8%
Our brewers engaged in a friendly competition by adjuncting an array of bourbon barrel aged imperial stout stock. The winner (S’mores Stout) of the contest made the final recipe. Wilderness campfire dessert flavors of graham cracker, local cacao nibs, marshmallow root, lactose and vanilla meld nicely at cellar temperature. 16oz - $14.40
Oud Sycamore Bruin
Sour - Flanders Oud Bruin | 6.7%
20 month wood-aged blend of 35% Tequila and 65% French oak barrels conditioned for 3 months in package. Brewed with Sycamore leaves and bark from Aravaipa Canyon lending tannins and notes of black tea to complement dark sugar and caramel.

Whiskey Del Bac Classic is a true American Single Malt, using the Scottish model of whiskey-making. Classic is made from a 100% barley malt that is mashed, fermented, copper pot distilled, aged and bottled on site. Classic opens with bright stone fruits on the nose and is balanced with a sweet caramel and oak finish. $11
Whiskey Del Bac Dorado
Whiskey Del Bac Dorado is a single malt whiskey with the true character of the American Southwest. Using the Scottish model of whisky-making, Dorado is made from 100% barley that is malted and smoked over a velvet mesquite fire, mashed, fermented, copper pot distilled, aged and bottled on site. $11
