The BBA version of our imperial porter w/ local ethically sourced cacao nibs (Zak's Chocolates), Madagascar vanilla beans and just enough lactose to round out the flavors for a soft smooth milk chocolate flavor. This version was aged in Blanton’s bourbon barrels for 12 months. Think chocolate ice cream w/ a bourbon glaze drizzled on top. 10oz - $10.25

Locally grown & malted Sinagua Malt and Sonora wheat compliment juicy citrus aromas from a massive (6.5/bbl) Mosaic and Citra DDH. $7.50

Mixed Culture Farmhouse Ale | 6.0%
This Woodnote Cellar farmhouse ale was fermented with our house saison strain and Brettanomyces to give it a bright flavor with notes of lemon flesh, dried apricot and white grapes. It was aged in 100% French oak before being blended with our house blonde ale for a total maturation time of 16 months. This beer was fermented to complete dryness, giving it a soft vinous finish. 10oz - $6.75

As Wilderness humans we embrace being kind to others as well as ourselves so we brewed a gluten-reduced, low impact (ABV) ale mashed with locally grown/malted Sinagua Malt and Sonora Wheat. A touch of orange peel, coriander, and light dry hop from Centennial/ Loral hops give this super session beer just enough intrigue on the palate. $5.50

Our brewers engaged in a friendly competition by adjuncting an array of bourbon barrel aged imperial stout stock. The winner (S’mores Stout) of the contest made the final recipe. Wilderness campfire dessert flavors of graham cracker, local cacao nibs, marshmallow root, lactose and vanilla meld nicely at cellar temperature. 16oz - $14.40
Oud Sycamore Bruin

20 month wood-aged blend of 35% Tequila and 65% French oak barrels conditioned for 3 months in package. Brewed with Sycamore leaves and bark from Aravaipa Canyon lending tannins and notes of black tea to complement dark sugar and caramel.
Prickly Pear Saison
Foeder Fermented Farmhouse Ale | 5.0%
This Woodnotes Cellar farmhouse ale was foeder fermented to dryness with a hybrid French & Belgian saison strain which adds a subtle spice and banana characteristics. Then we added a bunch of local Arizona prickly pear juice from AZ cactus Ranch to create a watermelon-like refreshment. $7
