Our water conserving Belgian style witbier mashed with Arizona grown/malted Sonora white wheat and Sinagua Malt brewed with the intention of supporting our local grain economy. As Wilderness humans we embrace being kind to others as well as ourselves so we brewed a gluten-reduced, low impact (ABV) ale mashed with locally grown/malted Sinagua Malt and Sonora Wheat. A touch of orange peel, coriander, and light dry hop from Centennial/ Loral hops give this super session beer just enough intrigue on the palate. 16oz - $6.00
The Desert Yeast Project: Vol 2

A Saison inspired ale brewed with an experimental blend of two Saccharomyces Yeast strains harvested from the flowers of a prickly pear cactus near the Rio Grande in Texas. This unique ale strain lends notes of citrus, grapefruit, clove and bubblegum.

A blend of 49% grape juice from AZ grown Counoise grapes provided by Page Springs Cellars and 51% fermentables derived from AZ grains, spontaneously fermented by natural microflora living on the grape skins and aged in french oak for 10 months before being naturally conditioned. Brewed for the Firestone Walker Terroir Project.

And as the water crisis in the Southwest worsens, choices like this are going to become more important than ever. We’ve doubled down on our water saving efforts by using Sabro and Zappa hops, both of which are offshoots of the Southwestern Neomexicanus hop, and both of which are relatively drought-resistant. The result is a crushable pale ale that we can all feel good about drinking.
